Ingredients
- 1 head cauliflower, cut into florets about 4 cups
- 2 cups shredded cheddar cheese, divided use certified GF cheese
- 1 cup milk or unsweetened almond milk
- 1/4 cup cream cheese softened
- 1/4 cup grated Parmesan cheese use certified GF Parmesan
- 2 tbsp butter for greasing the dish and sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt or to taste
- 1/4 tsp pepper or to taste
Instructions
- Preheat your oven to 375°F (190°C). Grab a baking dish (9x13 works well) and grease it with butter.

- In a large pot, boil salted water and cook the cauliflower florets for about 5-7 minutes until they're just tender but still crisp. Drain and set aside.

- In a medium saucepan, melt 2 tablespoons of butter over medium heat. Stir in the cream cheese, milk, garlic powder, onion powder, salt, and pepper until well mixed and smooth.

- Add in 1 ½ cups of shredded cheddar cheese and stir until melted and combined. Remove from heat and fold in the cooked cauliflower.
- Transfer the cauliflower-cheese mixture into the greased baking dish. Sprinkle the remaining cheddar cheese and Parmesan cheese on top for extra flavor and crunch.
- Bake in the preheated oven for 20 minutes or until the top is bubbly and golden brown.
- Remove from oven and let it cool for a few minutes before serving. Dig in and enjoy!
