Ingredients

  • 1 head cauliflower, cut into florets about 4 cups
  • 2 cups shredded cheddar cheese, divided use certified GF cheese
  • 1 cup milk or unsweetened almond milk
  • 1/4 cup cream cheese softened
  • 1/4 cup grated Parmesan cheese use certified GF Parmesan
  • 2 tbsp butter for greasing the dish and sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp pepper or to taste

Instructions

  • Preheat your oven to 375°F (190°C). Grab a baking dish (9x13 works well) and grease it with butter.
  • In a large pot, boil salted water and cook the cauliflower florets for about 5-7 minutes until they're just tender but still crisp. Drain and set aside.
  • In a medium saucepan, melt 2 tablespoons of butter over medium heat. Stir in the cream cheese, milk, garlic powder, onion powder, salt, and pepper until well mixed and smooth.
  • Add in 1 ½ cups of shredded cheddar cheese and stir until melted and combined. Remove from heat and fold in the cooked cauliflower.
  • Transfer the cauliflower-cheese mixture into the greased baking dish. Sprinkle the remaining cheddar cheese and Parmesan cheese on top for extra flavor and crunch.
  • Bake in the preheated oven for 20 minutes or until the top is bubbly and golden brown.
  • Remove from oven and let it cool for a few minutes before serving. Dig in and enjoy!

Notes

Substitutions & Variations:
  • Dairy-Free: Use vegan cheese and almond milk for a creamy texture.
  • Lower Sugar: Omit any added sugar or use a sugar substitute like coconut sugar.
  • Add Extra Greens: Mix in some spinach or kale for a nutrient boost before baking.
Claire's Gluten-Free Baking Notes:
For the best results, make sure your cauliflower is fully cooked before mixing with the cheese sauce to avoid a watery bake. If you’re using prepackaged GF products, read labels for certified GF assurance—trust me, cross-contamination isn’t just a myth. This dish keeps well in the fridge for up to three days and can be frozen for a month; just reheat in the oven to restore that cheesy goodness.
Tips:
Don't overcook the cauliflower; it should be tender but still hold its shape. If the cheese isn’t melting well, try turning up the heat for a few minutes towards the end. Keep an eye on that crispy top—burnt cheese isn't our friend.
