
Gluten Free Tuscan Chicken Pasta
There are weeknights when you cook because you have to…and then there are nights when you cook because you deserve something incredibly cozy.This Creamy Tuscan Chicken Pasta is the second one.It’s silky, rich, sun-dried-tomato dreamy, and tastes like a restaurant dish — but it comes together in one pan while the gluten-free fettuccine cooks on the side.

Ingredients
For the Chicken & Sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 3 cloves minced garlic
- 1` cup heavy cream
- 2 large chicken breasts (or sliced into thin cutlets)
- 1/2 cup gluten free chicken broth
- 1/2 cup sun-dried chopped tomatoes iol packed
- 1/2 cup parmesan Cheese
- 1 tsp italian seasoning
- 2 cups fresh baby spinach
For the Pasta
- 10 oz gluten free Fettucine (Jovial, Barilla, or Garofalo GF recommended)
- Salt for boiling water
Instructions
1. Cook the Chicken
- Season the chicken on both sides with salt and pepper.Heat olive oil in a large skillet over medium-high heat.Once hot, add the chicken and cook 4–5 minutes per side until golden and cooked through.Transfer to a plate.

2. Build the Creamy Tuscan Sauce
- Lower the heat to medium.Add the minced garlic and sauté about 30 seconds (don’t let it brown). Pour in the heavy cream and chicken broth, then stir in:-Italian seasoning-Sun-dried tomatoes-ParmesanSimmer 3–5 minutes until slightly thickened and glossy.

3. Cook the Gluten-Free Fettuccine
- While the sauce simmers, cook the fettuccine in a large pot of boiling salted water according to the package (GF pasta cooks FAST).Drain and set aside.

4. Finish the Dish
- Stir the spinach into the hot sauce so it wilts.Return the chicken (and any juices) to the pan.Add the cooked fettuccine and toss everything together until creamy and well coated.Serve immediately — the sauce clings beautifully while warm.
