Notes

Dairy-Free Option

Swap heavy cream with full-fat coconut milk + 1 tbsp nutritional yeast instead of Parmesan.

Gluten-Free Thickening Tip

If your sauce looks too thin:
→ Mix 1 tsp cornstarch + 1 tbsp cold water
→ Stir into sauce and simmer 1 minute
Works perfectly every time.

Preventing Gritty GF Pasta

Don’t overcook — GF fettuccine goes from perfect → mushy very fast.
8–10 minutes max depending on brand.

Protein Options

Swap chicken for:
  • shrimp
  • salmon
  • tofu
  • mushrooms (vegetarian version)

How to Store

GF pasta dries out in the fridge — to fix this, reheat with a splash of:
  • cream
  • chicken broth
  • or even water
Good as new.
