- 1 cup Arborio rice
- 4 cups gluten-free vegetable broth warm
- 2 tbsp olive oil
- 1 large onion finely chopped
- 3 cloves garlic minced
- 8 oz mushrooms sliced (cremini or button work well)
- ½ cup Parmesan cheese grated (or dairy-free alternative)
- 1 tbsp fresh parsley chopped for garnish
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup white wine optional, omit for alcohol-free
In a saucepan, warm the gluten-free vegetable broth over low heat. This will keep everything nice and cozy while you make your risotto.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it's translucent — about 5 minutes. Say goodbye to food boredom already!
Stir in the minced garlic and sliced mushrooms, and sauté for another 5 minutes until the mushrooms are tender and have released their delicious juices.

Once the rice is cooked al dente and has absorbed most of the broth (about 18-20 minutes total), stir in the Parmesan cheese, salt, and pepper. Remove from heat and let it rest for a minute — patience is key!
