Ingredients
  

  • 1 cup Arborio rice
  • 4 cups gluten-free vegetable broth warm
  • 2 tbsp olive oil
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 8 oz mushrooms sliced (cremini or button work well)
  • ½ cup Parmesan cheese grated (or dairy-free alternative)
  • 1 tbsp fresh parsley chopped for garnish
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup white wine optional, omit for alcohol-free

Instructions
 

  • In a saucepan, warm the gluten-free vegetable broth over low heat. This will keep everything nice and cozy while you make your risotto.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it's translucent — about 5 minutes. Say goodbye to food boredom already!
  • Stir in the minced garlic and sliced mushrooms, and sauté for another 5 minutes until the mushrooms are tender and have released their delicious juices.
  • Add the Arborio rice to the skillet, stirring frequently for about 2-3 minutes, until the rice is slightly translucent. It should feel like a warm hug at this point!
  • Pour in the white wine (if using), stirring until absorbed. This step is optional but it definitely adds a little flair!
  • Now the fun part! Gradually add the warm broth, one ladle at a time, stirring continuously. Wait for the rice to absorb the liquid before adding more. This helps create that creamy goodness we’re after!
  • Once the rice is cooked al dente and has absorbed most of the broth (about 18-20 minutes total), stir in the Parmesan cheese, salt, and pepper. Remove from heat and let it rest for a minute — patience is key!
  • Serve hot, garnished with fresh parsley for that touch of color. Now you’re ready to impress your taste buds and your guests!

Notes

Substitutions & Variations:
  • Dairy-Free: Use coconut milk instead of cheese and swap butter for vegan butter.
  • Lower Sugar: This recipe is naturally low in sugar, so no need for adjustments!
  • Add Spinach: Stir in 1 cup of fresh spinach just before serving for an extra nutrient boost!

Leftovers can be stored in the fridge for 2-3 days, or freeze for up to a month, but reheating may change the texture a bit — add extra broth if needed. To avoid cross-contamination, always check that your ingredients are certified gluten-free, especially any pre-packaged items like broth or stock.
Tips:
Stir constantly to encourage creamy consistency. If it's too thick, add more broth gradually. Avoid using too much heat; you want a gentle simmer, not a boiling pot.
